New concepts that appeal to different types of guests make people want to dine out and come back often. We speak with Soheil Vaezi, who runs Granna Matbar in Umeå.

-We wanted to add additional value to the restaurant experience. This way, we can attract different restaurant guests and the same guests to come back several days a week, says Soheil.

Granna Matbar in Umeå opened its doors before the summer. In the post-pandemic era, Soheil had sensed a desire among people to go out to eat again, and he wanted to breathe life into a neighborhood characterized by private residences. Granna Matbar is a restaurant with table service, a nice outdoor terrace, and a bar environment.

Different concepts attract guests every day of the week

When inflation soared, Soheil decided to try to add additional value to the restaurant experience. He believes that it must be even more worthwhile for people to spend their money at the restaurant now that many things in daily life have become more expensive. By offering different concepts for different target groups, he attracts guests several times a week.

– We believe that different concepts are the way forward, concepts that appeal to different target groups, regulars, or corporate customers. We will offer music nights, Saturday brunch, themed dinners, family concepts on Sundays, and pizza takeaways, says Soheil.

He highlights take away as a way to cater to the group of people who want to eat at home or at work. Granna Matbar plans to integrate Trivec’s POS system with Foodora or UberEats and hopes to attract more attention to the restaurant.

– We offer pizza on the regular menu, so the pizza oven is on all day. We wanted to find a way to use the oven more times during the day, so we offer take-away pizza as a separate part of our pizzeria, Inbocca, which will open soon, he says.

Corporate customers are becoming an increasingly important target group

To reach corporate customers, who often have dinners in the middle of the week, Soheil wants to attract them with concepts but also with a personal atmosphere. Simple invoicing for corporate customers was crucial for Soheil when he chose Trivec.

– We chose Trivec because they have easy invoice handling in the pos. If guests want to pay by invoice, I go to the pos and send the receipt to Fortnox with the push of a button. The next day, I review the receipt and then send the invoice via email or in the traditional way, depending on how the customer wants it, he says.

– It is especially suitable if we have a shortage of staff on some evenings, as a server can quickly take orders and payments from guests, he says.
